Pesto Smashed Potatoes



Ingredients

3 tbs olive oil

1 bag mini potatoes

pepper

1 tbs butter melted

3 garlic cloves



Instructions

Pre-heat oven to 400 degrees F


Wash & peel any potato eyes off


Place clean potatoes on a baking sheet pan & drizzle with olive oil and pink himalayan salt


place potatoes in oven and bake until golden brown and tender about 17/20 mins *constantly moving around to keep coated in olive oil


Meanwhile add about 7 tbs of pesto , minced garlic and melted butter in a bowl, and stir, Set aside.


Once potatoes are done gently smash down with a fork


Add a spoonful of pesto mix to top of potatoes

Sprinkle with salt & pepper
